He's got all the stuff he needs at this point. Get him a nice hardcover book, but it will have to be something obscure since every golf pro has read the bibles, such as Hogan's Fundamentals. Do not get him an instructional or theoretical book. Get him something like "Golf in the Kingdom" by Michael Murphy, if he hasn't read it already (fiction). Geoff Shackelford has written several books on golf course design and architecture. If money is no object then Tom Doak's Confidential Guide is an amazing book that gets more valuable every year (can be found on ebay). You probably know what he's interested in.
